APHRODISIAC SUGAR FREE VALENTINE’S DAY CUPCAKES
An intriguing combination that will give you an explosion of pleasure at every bite.
It was a real head-to-head initially, but ultimately the aphrodisiac salt free Valentine’s Day cupcakes won the survey gliding straight to my site to share their recipe.
In a few days it will be Valentine’s Day and like every year Dave and I will celebrate… “Lovers’ Day?!” You will say… “No?… We will celebrate my name day?”. For those who don’t know what’s a name day, I will tell you immediately… In Italy every day is related to a Saint, so all the people that have the same name of the Saint will celebrate the name day… sometimes the celebrations are like birthday parties with presents sometimes friends & family just greetings to you…. for this reason, every year the date of February 14th is dedicated to me… Saint Valentina from the kitchen???. Lol, I’m joking. By the way, Dave and I always find a way or an excuse to celebrate us almost every day between culinary and non-culinary surprises… and then among the thousand celebrations a most important date for us is the very next day… so let’s say the 14th is dedicated to me even if in the end I create a special dish to share with him? So finally these amazing sweets of 50 shades of turquoise come out of my kitchen…
The salt free aphrodisiac Valentine’s Day cupcakes
These cupcakes are born from the perfect and intriguing combination of 100% dark chocolate (or cocoa mass) and chili pepper which will unleash an explosion of pleasure at every bite. The contrast between sweet, bitter and spicy… the pieces of crunchy chocolate with the soft and velvety frosting… not to mention the “hot” cold sensation that you will discover by reading the recipe… in short, every sense will be satisfied… sight, taste, smell, touch even hearing can enjoy the preparation up to the moment of the final bite. Ingredients

60gr 00 Flour

20gr Bitter Cocoa powder

2gr Baking Powder

90gr Homemade butter (recipe on my website)

75gr Liquid buttermilk (check the butter recipe on my website)

2 Eggs
-
25gr Fructose
-
25gr 100% Dark Chocolate (or cocoa mass)

3gr Chili pepper
-
q.s. Chilli threads
- Frosting

100gr Heavy Cream

125gr Mascarpone Cheese

15gr Fructose

METHOD
Turn on the oven at 180°C (356°F) and prepare the necessary ingredients. In a bowl, whisk the eggs with the fructose with an electric whisk until they become frothy and light yellow.
When they are pretty frothy, pour in the buttermilk obtained from the preparation of the butter (see recipe here) and start mixing with a hand whisk.
Then add the melted homemade butter (to prepare the butter you can find the recipe here) and continue to mix.
Sift the flour with the help of a colander or sieve.
Now sift the bitter cocoa.
Finally, sift the chili pepper and the Baking Powder.
With the whisk mix all the ingredients until you get a smooth and homogeneous dough. Once obtained, pour the mixture into a pastry bag.
I always close the pastry bag with a clips so in the meantime I can make other preparations and I don’t risk the dough come out.
On a cutting board, cut the 100% dark chocolate (or cocoa mass) into small pieces
Take a muffin pan and place inside the holes the cups that you like most. Cut the tip of the pastry bag and start filling the cups until you reach 2/3 of their capacity.
Spread the pieces of chocolate or cocoa mass that you cut earlier on the surface and bake for 25 minutes in the previously preheated oven.
While the cupcakes are baking, prepare the frosting by whipping the cream together with the fructose. As soon as the cream is whipped, add the mascarpone and with the help of a spatula combine the ingredients until you get a nice compact cream.
Remember to keep some small pieces of chocolate aside for the final decoration.
Open a new pastry bag, place a star tip inside it, pour inside the frosting, close it with a clip and finally put it in the refrigerator until due time.
When the cupcakes are ready, take them out from the oven and let them cool down. When they have cooled completely, you can start decorating them with frosting.
Cut the tip of the pastry bag, press the final part and with a rotating movement, begin to draw an upward spiral. (A bit like if you were to frost a mountain)
Now decorate with the chili pepper threads and a small piece of chocolate that we have kept aside. The aphrodisiac Valentine’s day cupcakes are ready. Enjoy!
I recommend decorating the cupcakes with frosting just before eating them so you will not have to keep them in the refrigerator. In fact, these give the maximum explosion when the cupcake is at room temperature and the cream is cold or fresh. For post-filling conservation, let’s say they must be kept in the refrigerator, repaired with plastic wrap and eaten within 2/3 days maximum. You can also keep the cupcakes without frosting in the freezer, defrost them, decorate them and savor them… they will be as freshly made.
