1. Why is my pasta dough is too soft or too dry?

Maybe you put too much water or not enough... remember also 1 gr of water makes the difference.

Not all semolina or 00 flours are the same. So even if you use the same weight of flour and water, the result may change every time.

Remember: your dough needs to be elastic, smooth, not sticky, and definitely not dry like a rock.

Vallì’s tip: Want to get the perfect dough every time? When you try a new brand or type of flour, analyze everything, adjust as needed, and take notes. That way, next time you’ll know exactly what to expect...no surprises!

2. Why my dough brakes apart while I shape my pasta?

Usually is due to the way the dough was kneaded. If your dough is breaking, cracking, or not holding its shape it's because the dough wasn’t kneaded enough. So that there are still lumps inside and the gluten structure didn’t develop properly, result it brakes apart.

Valli’s Tip: Make sure to knead your dough thoroughly for at least 15 minutes, yes, even if your arms complain! Then let it rest: this step is just as important as kneading. It helps relax the dough and gives gluten time to work its magic.

3. Why my pasta brakes inside the water while cooking?

Yes can be so frustrating... you shape your beautiful pasta, drop it in the water… and it falls apart. Here’s why that might be happening:

The dough wasn’t kneaded enough or it didn’t rest properly after the kneading part this two steps are fundamental in the homemade pasta journey.

Vallì’s Tip: Knead your dough well (at least 15 minutes!) and let it rest for minimum 30 minutes. Don't skip this process if you don't want to make a mess in the hot water.
