LEFTOVER CAKE COOKIES

A sugar free recipe that gives new life to leftovers and cake scraps.

Today I want to share with you the recipe for my leftover cake cookies, perfect for using your leftovers. It will have happened to you too, especially during the holiday periods to be submerged by the leftovers of cake, cookies, muffins, sponge cakes and so on and so forth, and not knowing what to do with them especially if you you are tired of eating the cake you had prepared or if it’s no longer fragrant and soft as before because it has taken a little air…

I have the sugar free solution for you… You need a few ingredients and you will get super delicious and fragrant cookies… You can eat them like this or why not, also served with excellent homemade hazelnut butter or raspberries jam prepared with your own hands… Are you ready?

A sugar-free recipe that gives new life to leftovers and cake scraps

IngredientS

  • 200 gr leftover cake (sponge cake, muffins, cookies…)

  • 40gr Melted homemade Butter (see the recipe on this website)

  • 15gr Bitter cocoa powder

  • 1 egg

  • 1.5gr Baking Powder

  • q.s. pieces of chocolate (cocoa mass, 100/ dark chocolate, leftover ester eggs)

      METHOD

      Put your leftovers in a food processor, chop everything until you have obtained flour.

      You can use only one type of leftorver cake or a mix.

      Overturn the flour obtained in a clean bowl, add the baking powder, cocoa powder, and egg.

      If the total amount of flour that you get by mincing the whole cake does not reach the quantity required by the recipe, you can add some almond or hazelnut flour.

      With the help of a spoon or a fork begin to mix everything.

      Add the melted butter and continue to mix.

      Finally, compact the dough with your hands.

      Take a baking tray and cover it with baking paper.

      Take some dough and with the help of your hands shape it to form a ball.

      Bake the leftover cake cookies inside a preheated oven at 170 °C ventilated mode (340°F) for 15 minutes. When they are ready take them out from the oven and let it cool a bit.

      Excellent to be enjoyed warm but can also be kept well for a few days in a tin box.
