SUMMER SALAD WITHOUT SALT

A creative alternative to serve a super tasty salad.

Time flies and in the blink of an eye we have already arrived in July and with it the heat… and what could be better than a summer salad without salt for a fresh and tasty lunch.

I admit that during the year I am not a fan of salads, but when the summer season arrives the desire to make fleeting and fresh lunches takes over… this is my favorite recipe… not only because it is fresh and tasty, because the flavors of the ingredients mix perfectly, but because in the end you don’t even have to wash the dishes (or almost)… ? for a person like me who prefers to cook for 80 people instead of washing dishes is not bad!! But isn’t that by chance my favorite just for this reason ?! ?

Do you remember the recipe for the unsalted tortilla chips that I shared with you a few weeks ago?! With a few little tricks that dough will become our bowl to hold the summer salad… a crunchy bowl to eat.

Are you ready to lick your fingers after eating it?!

Let’s start from the procedure step by step and at the bottom, as usual, you will find the summary sheet with all the doses, ingredients, utensils etc that you can always keep with you.

METHOD

In a bowl we pour corn flour, 00 flour, water, EVO oil and spices (they give more taste but are not essential). Mix everything until the water has absorbed and we overturn on a work surface and knead until we get a malleable dough.

Place half dough on a lightly floured surface or on a sheet of baking paper that is always lightly floured. Cover the other half with plastic wrap and with the help of a rolling pin we begin to roll out the dough until we reach the thickness of 2 or 3 mm.

Place the ring of a cake tin or a bowl with a circumference of about 26 cm on our dough and by pressing on the ring we cut our circle. Proceed by doing the same process with the other half.

Take two bowls of about 20cm (7.8in) in circumference (one of these could be the bowl that we used for the dough). The important thing that can go to the oven. Let’s turn them upside down and brush abundant peanut oil on the whole surface.

We put our circles on the bowls and with the help of our hands we shape the dough. Spennelliamo entire surface with plenty of peanut oil. Place on a baking tray and bake in a hot oven at 200°C (392°F) until it is golden brown.

Let’s take them out of the oven and while we let it cool we proceed to the preparation of our summer salad.

You can put the circle also inside the boul… it will change just the shape.

Take the fresh prawns, peel them, with the help of a toothpick, remove the intestines, rinse them well and then turn them over in a hot pan with extra virgin olive oil. Let’s add  black pepper, sweet paprika and chilli according to our tastes and finally blend with lemon juice. Quickly sauté everything on high heat for 1 minute at most and then turn off the heat and let it rest.

Now take some rocket and rinse it under water. We do the same thing with strawberries. As far as cucumber is concerned, we rinse and purge it.

To purge the cucumber, that is, to remove that sour taste and make it more digestible, just cut the cucumber in two. The cut must take place about 3/4 of the cucumber. Take the two pieces and rub them against each other. You will see a kind of gelatinous substance that will come out, rinse and repeat this movement until it no longer comes out.

Take our bowl of corn and put the rocket as a base, slice our purged cucumber, the sliced ​​strawberries and finally our prawns. With a spoon we collect the sauce created by cooking prawns and pour it abundantly on the salad. We grate some untreated lemon zest and voilà your summer salad without salt is ready. You can season with extra virgin olive oil, a sprinkling of pepper and a dash of fresh lemon juice.
